Another brilliant addition to Enderun’s cream of the crop is an an award winning pastry chef.

Laeticia Moreau, Alain Ducasse Institute Philippines’ newest Executive Pastry Chef, joins Enderun colleges as its new Executive Pastry Chef for all of pastry programs.

To welcome Executive Pastry Chef Laeticia, A Grand Pastry Buffet was held at Culinary Arts Building, Enderun Colleges – McKinley Hill, Taguig today. Executive Chef Laeticia prepares a short but “sweet” pastry demo of “Tarte Au Chocolat” or chocolate tart making.

Moreau began her culinary career at Les Compagnon de Devoir at du Tour de France, Compagnons du Tour de France is a French organization of craftsmen and artisans. After her initial training, she fell in love with pastry arts.

Pursuing her passion inspired her to move to Paris to work for La Grande Epicerie de Paris. La Grande Epicerie de Paris is a food store that sells 30,000 gourmet products.

She also has worked in several cities including Lyon, Atlanta, and New York.

She has given an opportunity to teach at Les Compagnon du Devoir et du Tour de France and led to another position at Ecole Nationale Superieure de la Patisserie (ENSP), an Alain Ducasse School where she previously worked as assistant to the world Champion of Pastry.

Being part of the elite Ducasse family of chefs, Laeticia now finds herself in Manila, Philippines as part of Enderun Colleges.
